Ingredients

  • 2 tbsp. extra virgin olive oil
  • 1 white onion (finely chopped)
  • 5 carrots (sliced)
  • 3 cloves of garlic (minced)
  • 1 yellow bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 4 celery stalks (sliced)
  • 2 lb. organic ground beef  (bison, venison or ground turkey can be substituted)
  • ½ tsp. dried basil
  • ½ tsp. dried parsley flakes
  • ½ tsp. red pepper flakes
  • ½  tsp. dried oregano
  • ½  tsp. onion powder
  • ½  tsp. Himalayan sea salt
  • 3 cups organic beef stock
  • 1 can Organic diced tomatoes (14.5oz)
  • 1 can organic tomato paste
  • 2/3 cup uncooked brown rice (rinsed)

 

 

Instructions

In a large pot over medium-high heat, brown the meat with the onion, celery and garlic. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools).

Add the remaining ingredients to the crock pot along with the browned meat mixture. Cook on the low setting for 6-8 hours depending upon crock pot.
