Detoxifying Superfood Salad

  •  1 cup fresh spinach
  • 1 cup fresh kale, chopped
  •  ½ cup fresh sprouts (bean or alfalfa sprouts) 
  • ½ cup diced cooked chicken
  • ½ cup cooked diced beets (red or golden)
  •  ½ green apple diced
  •  1 Tbsp. Pumpkin Seeds
  • 1 Tbsp. Hemp hearts
  • 2 Tbsp. crumbled goat cheese (optional)


Dressing Ingredients

  • 1 Tbsp. Extra Virgin Olive oil
  • 1 Tbsp. Apple Cider Vinegar or Balsamic Vinegar
  • ½ tsp. fresh lemon juice


Instructions

1. In a serving bowl, combine spinach, kale, chicken, beets, apple and sprouts.

2. Combine all dressing ingredients in a bowl and toss to coat.

3. Sprinkle with pumpkin seeds, hemp hearts and goat cheese (if using).
